Description
Bees pollinate the flowers of eucalyptus trees and collect the honeydew found on the bark of these trees from time to time to produce eucalyptus/safeda honey. It has been observed that the darker the safeda honey is, the more likely it will appear reddish. It ranges from sour to sweet and is best eaten raw, unfiltered, and unheated. Bees’ first-rate eucalyptus bushes are the ones that produce the most pollen and highest nectar flow.
For this reason, old-growth forests of eucalyptus are the most useful. A true connoisseur of eucalyptus/safeda honey honey may choose the terroir that bestows the honey in a particular region, but bees seem to love eucalyptus regardless of the geographic region where the wood is located.
